One reader was in a dilemma last week. She doesn’t want to eat cooked carrots because of their high sugar content, but raw, organic carrots may have parasites.
One answer, says a reader, is to soak the carrots first in a solution of apple-cider vinegar and water (one-quarter of a cup per sinkful of water) for 15 minutes. Another idea is an ozone generator, which can cleanse all fruits and vegetables. One product is the PortaZone UV available from Self Help Resources in California. Alternatively, just wash, scrub and peel the carrots.
